1 egg
1 cup sugar
1/4 cup melted butter
1 tsp. vanilla
3 large bananas mashed or 4 1/2 small
1 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1/2 cup chopped pecans or walnuts (optional)
Beat egg slightly. Add sugar, melted butter and vanilla. Blend bananas and add to egg mixture. Sift together flour, soda and salt and add to mixture, mixing only until just mixed. Do not over-mix! Add nuts. Bake at 350 degrees in greased loaf pan (4 1/2" x 9" x 5") for 45 minutes or until inserted wooded toothpick comes out clean. Cool and remove from pan. Drizzle with orange glaze when cooled. Makes 6-8 servings.
Orange glaze:
2 tsp. butter or margarine - melted
powdered sugar
orange juice
Mix together melted butter and orange juice. Then add powdered sugar gradually until desired thickness is achieved.
Michelle's notes:
I have found that my banana breads usually get really brown before the middle is done, so I watch for my desired top color and then smack a piece of foil on top and then bake until bread is done. Can also use for making muffins. Do not substitute chocolate chips in here. Use my other banana bread recipe.
